Originally, we had planned to go to Pai on the first night. But as it was becoming increasingly difficult to keep our eyes open throughout the day, we had to postpone it to another day instead. Ugh. The anticipation was killing me. So when we finally made the visit, we got there early at 5PM and I could hardly wait for the food!
Chef Nuit Pad Thai. The rice noodles were coated in a tangy tamarind sauce with generous amounts of chicken, tofu, egg, and bean sprouts. My brother doesn’t particularly like Thai food but he devoured this so it was definitely well-received.
The Khao Soi was a bowl of perfectly cooked egg noodles swimming in a fragrant and rich curry broth! The chicken drumsticks were fall-off-the-bone tender. And the finishing touch was a bundle of crispy noodles that I enjoyed dipping into the curry.
Pai was definitely one of the highlights of my trip. The food was simply amazing and as I’m writing this, I wish I could go back right now. It’s no surprise as to why they’re so popular with frequently long line-ups.
